Your preparation before writing a new novel is impressively thorough and fascinating. I loved your book, Cave of Silence. Heart-rending stuff - it's story haunts me still. I love all kinds of pies with handmade pastry. My mother makes hers in round individual shapes, and her hortopitas are great too. My favorite though is sweet kolokithopita, i.e. pumpkin and cinnamon as a filling.
